Cucumber Lemon Kombucha Mocktail
Got cucumbers coming out of your ears?
You’re in good company in Wisconsin. This time of year cucumbers, zucchini and tomatoes are given away like hand me downs. No one ever thinks they’ll have enough of these vegetables when we start planting in mid-May and by mid-August gardeners are begging neighbors and friends to take them.
This mocktail ends up tasting like a sparkling lemonade but just a little fancier.
Cucumber Lemon Kombucha Mocktail

A perfect summer drink to use up all those cucumbers from your garden! This delicious tonic tastes like a slightly sparkling lemonade. Add your favorite berry garnish to make it just a little more beautiful.
Ingredients
Produce
- 1 small cucumber
- 2 lemons
- 1 orange
- 1 tsp honey or agave
- 2 tbsp mint leaves
- 1 (16 oz) bottle of Kombucha
Instructions
- Thinly slice the cucumber and squeeze juice from the lemons and orange into a cocktail shaker. Add cucumber and honey.
- Tear up the mint leaves and add to shaker.
- With muddler or rounded end of wooden spoon, mash cucumbers and mint.
- Add lemon juice, orange juice, and 1 cup ice.
- Cover and shake vigorously.
- Strain mixture into 2 tall cocktail glasses filled with ice.
- Top off with the kombucha.
